Delicious mini spiced pumpkin muffins, perfect for fall.
Ingredients

- 1 cup all-purpose flour
- 1/2 cup sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp ground cloves
- 1/2 cup pumpkin puree
- 1/4 cup vegetable oil
- 1/4 cup milk
- 1 large egg
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Grease a mini muffin tin.
- In a bowl, mix flour, sugar, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
- In another bowl, whisk pumpkin puree, oil, milk, egg, and vanilla.
- Combine wet and dry ingredients. Stir until just mixed.
- Spoon batter into muffin tin, filling each cup 2/3 full.
- Bake for 12-15 minutes or until a toothpick comes out clean.
- Cool for 5 minutes before removing from the tin.
Notes
- Store in an airtight container for up to 3 days.
- For extra flavor, add a sprinkle of cinnamon sugar before baking.
