- 1 cup all-purpose flour
- 1/2 cup pumpkin puree
- 1/4 cup brown sugar
- 1/4 cup granulated sugar
- 1/4 cup vegetable oil
- 1 large egg
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp salt
- 1/2 cup chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and grease a mini muffin tin.
- In a bowl, mix flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, whisk pumpkin puree, brown sugar, granulated sugar, oil, and egg.
- Combine wet and dry ingredients, then fold in chocolate chips.
- Fill muffin cups 2/3 full and bake for 12-15 minutes.
- Let cool before serving.
Notes
- Use canned or homemade pumpkin puree.
- Adjust sugar to taste.
- Store in an airtight container for up to 3 days.
