Ingredients

  • 100g unsalted butter
  • 150g brown sugar
  • 2 large eggs
  • 150g all-purpose flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 50g chopped nuts
  • 50ml orange juice
  • 100g marzipan
  • 100g icing

Instructions

  1. Preheat your oven to 160°C (320°F).
  2. In a bowl, mix the dried fruits, nuts, and orange juice.
  3. Cream the butter and brown sugar together.
  4. Add the eggs one at a time, mixing well.
  5. Sift in the flour, baking powder, and cinnamon.
  6. Fold in the fruit mixture.
  7. Pour batter into mini cake tins.
  8. Bake for 25-30 minutes.
  9. Let them cool before decorating with marzipan and icing.
