Ingredients

  • 16 oz cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 3 eggs
  • 1/2 cup sour cream

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Mix graham cracker crumbs, 1/4 cup sugar, and melted butter in a bowl.
  3. Press the mixture into the bottom of a muffin tin.
  4. Beat cream cheese, 1 cup sugar, and vanilla extract until smooth.
  5. Add eggs one at a time, mixing well after each addition.
  6. Stir in sour cream until blended.
  7. Pour the cheesecake mixture over the crusts in the muffin tin.
  8. Bake for 20-25 minutes or until set.
  9. Cool to room temperature, then refrigerate for at least 3 hours before serving.
