- 4 Medium-sized russet potatoes
- 2 tablespoons Olive oil

Instructions
- Wash and scrub the potatoes under cold water to remove any dirt.
- Poke several holes in each potato with a fork to allow steam to escape during cooking.
- Rub the potatoes with olive oil and sprinkle with salt and pepper.
- Place the potatoes on a microwave-safe plate and microwave on high for 10 minutes, flipping halfway through. Cooking time may vary based on the size of the potatoes and the wattage of your microwave.
- Check for doneness by inserting a fork or knife into the center of a potato; it should be tender.
- If needed, microwave for an additional 1-2 minutes until fully cooked.
- Let the potatoes rest for a few minutes, then slice open and fluff the insides with a fork.
- Top with butter, sour cream, and chives or green onions as desired.
Notes
- For extra crispy skin, after microwaving, place the potatoes in a preheated oven at 400°F (200°C) for about 10 minutes.
- You can adjust the cooking time based on the number of potatoes and the size. Start with 10 minutes and add time as needed.
