Ingredients

  • 2 tablespoons Olive oil

  • for serving Butter or sour cream (optional)
  • for garnish Chives or green onions (optional)

Instructions

  1. Wash and scrub the potatoes under cold water to remove any dirt.
  2. Poke several holes in each potato with a fork to allow steam to escape during cooking.
  3. Rub the potatoes with olive oil and sprinkle with salt and pepper.
  4. Place the potatoes on a microwave-safe plate and microwave on high for 10 minutes, flipping halfway through. Cooking time may vary based on the size of the potatoes and the wattage of your microwave.
  5. Check for doneness by inserting a fork or knife into the center of a potato; it should be tender.
  6. If needed, microwave for an additional 1-2 minutes until fully cooked.
  7. Let the potatoes rest for a few minutes, then slice open and fluff the insides with a fork.
  8. Top with butter, sour cream, and chives or green onions as desired.

Notes

  • For extra crispy skin, after microwaving, place the potatoes in a preheated oven at 400°F (200°C) for about 10 minutes.
  • You can adjust the cooking time based on the number of potatoes and the size. Start with 10 minutes and add time as needed.
