- 4 cups corn (fresh, frozen, or canned)
- 1 cup sour cream
- 1 cup mayonnaise
- 1 cup crumbled cotija cheese
- 1 cup shredded cheddar cheese
- 1/2 cup chopped fresh cilantro
- 1/4 cup lime juice
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 1/2 cup breadcrumbs (optional for topping)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the corn, sour cream, mayonnaise, cotija cheese, cheddar cheese, cilantro, lime juice, chili powder, garlic powder, salt, and pepper. Mix until well combined.
- Transfer the mixture to a greased baking dish and spread it evenly.
- If using, sprinkle breadcrumbs on top for added crunch.
- Bake in the preheated oven for 25-30 minutes, or until the casserole is hot and bubbly.
- Remove from the oven and let it cool for a few minutes before serving. Garnish with additional cilantro and cotija cheese if desired.
Notes
- Feel free to add diced jalapeños for some heat.
- This casserole can be made ahead of time and stored in the fridge before baking.
- For a smoky flavor, consider adding smoked paprika.
