- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 6 cups mixed salad greens
- 1 cup cherry tomatoes, halved
- 1 cucumber, sliced
- 1/2 red onion, thinly sliced
- 1/4 cup feta cheese, crumbled
- 1/4 cup balsamic vinaigrette
Instructions
- Preheat your grill to medium-high heat.
- In a bowl, mix olive oil, garlic powder, paprika, salt, and pepper. Coat the chicken breasts with the mixture.
- Grill the chicken for 6-7 minutes on each side, or until fully cooked. Remove from grill and let rest for 5 minutes.
- Meanwhile, in a large salad bowl, combine the salad greens, cherry tomatoes, cucumber, red onion, and feta cheese.
- Slice the grilled chicken and place it on top of the salad.
- Drizzle with balsamic vinaigrette before serving.
Notes
- Feel free to add your favorite vegetables to the salad.
- For a lighter dressing, substitute balsamic vinaigrette with lemon juice and olive oil.
