- 6 ears of fresh corn, husked
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- Lime wedges, for serving
Instructions
- Preheat your grill to medium-high heat.
- Husk the corn and remove all silk. Rinse under cold water and pat dry.
- In a small bowl, mix together olive oil, salt, black pepper, and paprika.
- Brush the olive oil mixture generously over each ear of corn.
- Place the corn on the grill and cook for about 10-15 minutes, turning occasionally, until the corn is tender and has nice grill marks.
- Remove the corn from the grill and sprinkle with Parmesan cheese and chopped parsley.
- Serve hot with lime wedges on the side.
Notes
- For a spicier kick, add some chili powder to the olive oil mixture.
- Feel free to experiment with different toppings like cilantro, cotija cheese, or a squeeze of lemon.
