Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 6 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1/2 red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup balsamic vinaigrette

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a bowl, mix olive oil, garlic powder, paprika, salt, and pepper. Coat the chicken breasts with the mixture.
  3. Grill the chicken for about 6-7 minutes on each side, or until fully cooked. Remove from the grill and let rest for 5 minutes.
  4. In a large bowl, combine mixed greens, cherry tomatoes, cucumber, red onion, and feta cheese.
  5. Slice the grilled chicken and place it on top of the salad.
  6. Drizzle balsamic vinaigrette over the salad and serve.
