- 1 lb 1 lb shrimp, peeled and deveined
- 2 tablespoons 2 tablespoons olive oil
- 1 teaspoon 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 cup 1 cup cherry tomatoes, halved
- 1 1 avocado, diced
- 1/4 cup 1/4 cup fresh cilantro, chopped
- 1 Juice of 1 lime
- Tortilla chips, for serving
Instructions
- Preheat the grill to medium-high heat.
- In a bowl, toss the shrimp with olive oil, garlic powder, salt, and pepper.
- Grill the shrimp for 2-3 minutes on each side, or until cooked through.
- In another bowl, combine cherry tomatoes, avocado, cilantro, and lime juice. Mix gently.
- Once the shrimp is done, chop it into bite-sized pieces and add it to the avocado mixture.
- Serve the shrimp avocado salsa with tortilla chips.
