- 1 cup quinoa, rinsed
- 2 cups water or chicken broth
- 1 lb chicken breast, grilled and sliced
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, diced
- 1/2 cup Kalamata olives, pitted and sliced
- 1/2 cup feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 tablespoon lemon juice
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- In a medium saucepan, combine quinoa and water (or chicken broth). Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until quinoa is cooked and water is absorbed. Fluff with a fork and let cool.
- In a large bowl, combine cherry tomatoes, cucumber, red onion, Kalamata olives, feta cheese, and parsley.
- In a small bowl, whisk together olive oil, red wine vinegar, lemon juice, dried oregano, salt, and pepper.
- Add the cooled quinoa to the vegetable mixture and toss to combine.
- Drizzle the dressing over the salad and toss gently to coat.
- Top the salad with sliced grilled chicken.
- Serve immediately or refrigerate for up to 2 hours before serving.

- This salad can be made ahead of time and stored in the refrigerator for a quick meal.
