Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 lemons, juiced and zested
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1/4 cup kalamata olives
  • 1/4 cup feta cheese, crumbled
  • 2 cups cooked quinoa

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix olive oil, lemon juice, lemon zest, garlic, oregano, salt, and pepper.
  3. Place chicken breasts in a baking dish and pour the marinade over them. Coat evenly.
  4. Bake for 25-30 minutes or until chicken reaches an internal temperature of 165°F (74°C).
  5. Let chicken rest for 5 minutes, then slice into strips.
  6. Divide cooked quinoa, sliced chicken, cherry tomatoes, cucumber, olives, and feta cheese into meal prep containers.
  7. Store in the refrigerator for up to 4 days.
