- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 2 lemons, juiced and zested
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup cherry tomatoes, halved
- 1 cucumber, sliced
- 1/4 cup kalamata olives
- 1/4 cup feta cheese, crumbled
- 2 cups cooked quinoa
Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, mix olive oil, lemon juice, lemon zest, garlic, oregano, salt, and pepper.
- Place chicken breasts in a baking dish and pour the marinade over them. Coat evenly.
- Bake for 25-30 minutes or until chicken reaches an internal temperature of 165°F (74°C).
- Let chicken rest for 5 minutes, then slice into strips.
- Divide cooked quinoa, sliced chicken, cherry tomatoes, cucumber, olives, and feta cheese into meal prep containers.
- Store in the refrigerator for up to 4 days.

- You can substitute quinoa with brown rice or couscous.
- For extra flavor, marinate the chicken for at least 30 minutes before baking.
