- 2 boneless, skinless chicken breasts
- 2 tbsp olive oil
- 1 lemon (juiced and zested)
- 2 cloves garlic (minced)
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup cooked quinoa or rice
- 1 cup cherry tomatoes (halved)
- 1 cucumber (diced)
- 1/4 cup red onion (thinly sliced)
- 1/4 cup feta cheese (crumbled)
- 2 tbsp fresh parsley (chopped)
Instructions
- In a bowl, mix olive oil, lemon juice, lemon zest, garlic, oregano, salt, and pepper.
- Add chicken breasts to the marinade and let sit for 15 minutes.
- Heat a skillet over medium heat and cook chicken for 6-7 minutes per side until fully cooked.
- Slice the chicken into strips.
- Divide cooked quinoa or rice between two bowls.
- Top with cherry tomatoes, cucumber, red onion, and sliced chicken.
- Sprinkle with feta cheese and fresh parsley.
- Drizzle with extra lemon juice if desired.
Notes
- Marinate the chicken longer for deeper flavor.
- Substitute quinoa with couscous or farro if preferred.
