  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the onion and garlic; sauté until the onion is translucent.
  3. Stir in the carrots, celery, and bell pepper; cook for 5 minutes.
  4. Add the chickpeas, vegetable broth, diced tomatoes, oregano, and basil.
  5. Bring to a boil, then reduce heat and simmer for 20-25 minutes.
  6. Season with salt and pepper to taste.
