- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 carrot, diced
- 1 celery stalk, diced
- 1 red bell pepper, chopped
- 1 can (15 oz) chickpeas, drained and rinsed
- 4 cups vegetable broth
- 1 can (14 oz) diced tomatoes
- 1 teaspoon dried oregano
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 2 cups spinach or kale, chopped
- Juice of 1 lemon
- Fresh parsley for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Add the onion and garlic, sauté until softened.
- Add the carrot, celery, and red bell pepper. Cook for about 5 minutes until vegetables are tender.
- Stir in the chickpeas, vegetable broth, diced tomatoes, oregano, smoked paprika, salt, and pepper. Bring to a boil.
- Reduce heat and let it simmer for 20 minutes. Stir occasionally.
- Add the spinach or kale and simmer for an additional 5 minutes until greens are wilted.
- Remove from heat and stir in lemon juice.
- Serve hot, garnished with fresh parsley.
Notes
- This soup can be stored in an airtight container in the refrigerator for up to 3 days.
- Feel free to add any other vegetables you have on hand.
- For a creamier texture, blend half of the soup before adding greens.
