Ingredients

- 2 cups cooked penne pasta
- 1 cup diced cooked chicken
- 1/2 cup cherry tomatoes, halved
- 1/4 cup sliced black olives
- 1/4 cup diced cucumber
- 1/4 cup crumbled feta cheese
- 2 tbsp chopped fresh parsley
- 2 tbsp extra virgin olive oil
- 1 tbsp lemon juice
- 1 clove garlic, minced
- 1/2 tsp dried oregano
- Salt and pepper to taste
Instructions
- In a large bowl, combine cooked pasta, diced chicken, cherry tomatoes, black olives, cucumber, feta cheese, and parsley.
- In a small bowl, whisk together olive oil, lemon juice, minced garlic, oregano, salt, and pepper.
- Pour the dressing over the pasta mixture and toss gently to coat.
- Refrigerate for at least 30 minutes before serving to allow flavors to meld.
Notes
- For a lighter version, reduce the amount of feta cheese.
- Add red onion or bell pepper for extra crunch.
- Best served chilled.
