- 1 lb lean ground turkey or chicken
- 1/2 cup oats, rolled
- 1/2 cup grated zucchini
- 1/2 onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup low-sodium tomato sauce
- 1 egg, beaten
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup fresh parsley, chopped
- 1/4 cup low-fat shredded cheese (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the ground turkey or chicken, oats, grated zucchini, chopped onion, minced garlic, half of the tomato sauce, beaten egg, Worcestershire sauce, thyme, salt, pepper, and chopped parsley.
- Mix well until all ingredients are fully combined.
- Transfer the meat mixture to a loaf pan and shape it into a loaf.
- Spread the remaining tomato sauce over the top of the meatloaf.
- If using, sprinkle the shredded cheese on top.
- Bake in the preheated oven for 50-60 minutes, or until the internal temperature reaches 165°F (74°C).
- Remove from oven and let it rest for 10 minutes before slicing and serving.
Notes
- Feel free to add your favorite vegetables to the mixture for extra nutrition.
- You can substitute ground beef, but choose a lean cut to keep it healthy.
