A fun twist on classic meatloaf, these meatloaf muffins are easy to make and perfect for portion control.
Ingredients

- 1 pound ground beef
- 1 cup breadcrumbs
- 1/2 cup chopped onion
- 1/2 cup milk
- 1 egg
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup ketchup
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine ground beef, breadcrumbs, onion, milk, egg, Worcestershire sauce, salt, and pepper.
- Mix until well combined.
- Grease a muffin tin.
- Scoop the meat mixture into the muffin tin, filling each cup about 3/4 full.
- Top each muffin with a tablespoon of ketchup.
- Bake for 25-30 minutes or until cooked through.
- Let cool for a few minutes before serving.
Notes
- You can use ground turkey or chicken for a lighter option.
- Add your favorite seasonings for extra flavor.
- Leftovers can be stored in the fridge for up to 3 days.
