A delicious and filling meatless soup made in a crock pot, perfect for any day of the week. Packed with vegetables and flavor, this soup is easy to prepare and requires minimal effort.

- 1 medium onion, diced
- 2 cloves garlic, minced
- 3 carrots, sliced
- 2 celery stalks, chopped
- 1 bell pepper, diced
- 1 zucchini, chopped
- 1 can (14.5 oz) diced tomatoes, undrained
- 4 cups vegetable broth
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 bay leaf
- 2 cups fresh spinach
- Juice of 1 lemon
Instructions
- In a crock pot, combine the diced onion, minced garlic, sliced carrots, chopped celery, diced bell pepper, and chopped zucchini.
- Add the undrained diced tomatoes, vegetable broth, kidney beans, chickpeas, dried basil, dried oregano, salt, pepper, and bay leaf.
- Stir to combine all ingredients. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- About 30 minutes before serving, stir in the fresh spinach and lemon juice.
- Remove the bay leaf before serving. Adjust seasoning as needed and enjoy your hearty meatless soup!
