  • 2 cloves garlic, minced
  • 3 carrots, sliced
  • 2 celery stalks, chopped
  • 1 bell pepper, diced
  • 1 zucchini, chopped
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 4 cups vegetable broth
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 bay leaf
  • 2 cups fresh spinach
  • Juice of 1 lemon

Instructions

  1. In a crock pot, combine the diced onion, minced garlic, sliced carrots, chopped celery, diced bell pepper, and chopped zucchini.
  2. Add the undrained diced tomatoes, vegetable broth, kidney beans, chickpeas, dried basil, dried oregano, salt, pepper, and bay leaf.
  3. Stir to combine all ingredients. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  4. About 30 minutes before serving, stir in the fresh spinach and lemon juice.
  5. Remove the bay leaf before serving. Adjust seasoning as needed and enjoy your hearty meatless soup!
