Instructions
- Mix ground beef, breadcrumbs, egg, salt, and pepper in a bowl.
- Shape into 1-inch meatballs.
- Heat olive oil in a pot over medium heat.
- Add onions and cook until caramelized, about 20 minutes.
- Pour in beef broth, thyme, and bay leaf.
- Add meatballs and simmer for 15 minutes.
- Top with Gruyère cheese before serving.
