- 1 lb chicken breast, diced
- 2 cups mixed vegetables (frozen or fresh)
- 1 cup rice, uncooked
- 2 cups chicken broth
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add diced chicken breast and season with garlic powder, onion powder, salt, and pepper. Cook until browned, about 5-7 minutes.
- Add mixed vegetables to the skillet and stir to combine. Cook for another 3-5 minutes until vegetables are tender.
- In a separate pot, bring chicken broth to a boil. Add rice, cover, and reduce heat to low. Cook according to package instructions.
- Once rice is cooked, fluff with a fork and combine with the chicken and vegetable mixture in the skillet.
- Serve warm and enjoy your easy meal!
