Ingredients

  • 1 cup of corn
  • 1 red bell pepper, diced
  • 1 avocado, diced
  • 1 lime, juiced
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, bring vegetable broth to a boil.
  3. Add quinoa and reduce heat to low.
  4. Cover and simmer for 15 minutes.
  5. Fluff quinoa with a fork and let it cool.
  6. In a bowl, mix black beans, corn, bell pepper, and avocado.
  7. Add lime juice, salt, and pepper to the mixture.
  8. Combine the quinoa with the vegetable mixture.
  9. Store in meal prep containers.
