Ingredients

Instructions
- Rinse quinoa under cold water.
- In a pot, bring vegetable broth to a boil.
- Add quinoa and reduce heat to low.
- Cover and simmer for 15 minutes.
- Fluff quinoa with a fork and let it cool.
- In a bowl, mix black beans, corn, bell pepper, and avocado.
- Add lime juice, salt, and pepper to the mixture.
- Combine the quinoa with the vegetable mixture.
- Store in meal prep containers.
