Ingredients

  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/4 cup granulated sugar (for rolling)
  • 2 tbsp ground cinnamon (for rolling)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, baking powder, salt, and ground cinnamon.
  3. In a separate bowl, cream the softened butter and granulated sugar until light and fluffy.
  4. Add the maple syrup, eggs, and vanilla extract to the butter mixture, mixing until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Chill the dough in the refrigerator for at least one hour.
  7. In a small bowl, combine the granulated sugar and ground cinnamon for rolling.
  8. Scoop out tablespoons of dough and roll them into balls.
  9. Roll each ball in the cinnamon-sugar mixture until fully coated.
  10. Place the coated dough balls on a baking sheet lined with parchment paper, spacing them about 2 inches apart.
  11. Bake in the preheated oven for 8 to 10 minutes, or until the edges are set.
  12. Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
