- 4 bone-in pork chops
- 1/4 cup maple syrup
- 2 tablespoons Dijon mustard
- 1 tablespoon soy sauce
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 4 medium sweet potatoes, peeled and chopped
- 2 tablespoons olive oil
- 1 teaspoon cinnamon
- Fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- In a small bowl, whisk together the maple syrup, Dijon mustard, soy sauce, garlic powder, onion powder, salt, and pepper.
- In a large bowl, toss the chopped sweet potatoes with olive oil, cinnamon, and a pinch of salt.
- Spread the sweet potatoes out on a baking sheet and roast in the oven for 20-25 minutes, or until tender.
- While the sweet potatoes are roasting, heat a large skillet over medium-high heat.
- Season the pork chops with salt and pepper on both sides.
- Add the pork chops to the skillet and sear for 3-4 minutes on each side until browned.
- Reduce the heat to medium and brush the maple glaze over the pork chops.
- Cook the pork chops for an additional 5-7 minutes, or until they reach an internal temperature of 145°F (63°C).
- Remove the pork chops from the skillet and let them rest for a few minutes.
- Serve the glazed pork chops with roasted sweet potatoes on the side, garnished with fresh parsley if desired.
Notes
- For extra flavor, marinate the pork chops in the maple glaze for 30 minutes before cooking.
- Feel free to add other spices to the sweet potatoes, such as paprika or cayenne for a kick.
