Description

Ingredients

  • 4 bone-in pork chops
  • 1/4 cup maple syrup
  • 2 tablespoons Dijon mustard
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 4 medium sweet potatoes, peeled and chopped
  • 2 tablespoons olive oil
  • 1 teaspoon cinnamon
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, whisk together the maple syrup, Dijon mustard, soy sauce, garlic powder, onion powder, salt, and pepper.
  3. In a large bowl, toss the chopped sweet potatoes with olive oil, cinnamon, and a pinch of salt.
  4. Spread the sweet potatoes out on a baking sheet and roast in the oven for 20-25 minutes, or until tender.
  5. While the sweet potatoes are roasting, heat a large skillet over medium-high heat.
  6. Season the pork chops with salt and pepper on both sides.
  7. Add the pork chops to the skillet and sear for 3-4 minutes on each side until browned.
  8. Reduce the heat to medium and brush the maple glaze over the pork chops.
  9. Cook the pork chops for an additional 5-7 minutes, or until they reach an internal temperature of 145°F (63°C).
  10. Remove the pork chops from the skillet and let them rest for a few minutes.
  11. Serve the glazed pork chops with roasted sweet potatoes on the side, garnished with fresh parsley if desired.

Notes

  • For extra flavor, marinate the pork chops in the maple glaze for 30 minutes before cooking.
  • Feel free to add other spices to the sweet potatoes, such as paprika or cayenne for a kick.
