- 4 boneless, skinless chicken breasts
- 1/4 cup pure maple syrup
- 2 tbsp Dijon mustard
- 1 tbsp olive oil
- 1 tsp garlic powder
- Salt and pepper to taste
- 2 large sweet potatoes, peeled and cubed
- 2 tbsp butter
- 1/4 cup milk
- 1 bunch kale, stems removed and chopped
- 1 clove garlic, minced
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, mix maple syrup, Dijon mustard, garlic powder, salt, and pepper. Coat the chicken breasts with the mixture.
- Heat olive oil in an oven-safe skillet over medium-high heat. Sear the chicken for 2-3 minutes per side.
- Transfer the skillet to the oven and bake for 15-20 minutes until the chicken is cooked through.
- Boil sweet potatoes until tender, about 15 minutes. Drain, then mash with butter and milk. Season with salt and pepper.
- In a separate pan, sauté kale and garlic in olive oil for 3-4 minutes until wilted. Season to taste.
- Serve the maple-glazed chicken with mashed sweet potatoes and sautéed kale.

- Adjust maple syrup amount for desired sweetness.
- Substitute kale with spinach if preferred.
- Use chicken thighs for a juicier option.
