Description

A simple and healthy meal featuring maple Dijon-glazed salmon with roasted Brussels sprouts and sweet potato fries.


Ingredients

  • 2 salmon fillets (6 oz each)
  • 2 tbsp maple syrup
  • 1 tbsp Dijon mustard
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 lb Brussels sprouts, trimmed and halved
  • 1 large sweet potato, cut into fries

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a small bowl, mix maple syrup, Dijon mustard, and garlic powder.
  3. Place salmon fillets on the baking sheet. Brush with the maple Dijon glaze.
  4. Toss Brussels sprouts and sweet potato fries with olive oil, salt, and pepper. Spread them on the baking sheet around the salmon.
  5. Bake for 20-25 minutes, flipping the vegetables halfway, until salmon flakes easily and vegetables are tender.
  6. Serve immediately.
