Ingredients

  • 6 large eggs
  • 3 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon white vinegar
  • Salt and pepper to taste
  • Paprika for garnish
  • Chives for garnish (optional)

Instructions

  1. Place the eggs in a saucepan and cover with cold water. Bring to a boil over medium-high heat.
  2. Once boiling, cover the saucepan and remove from heat. Let sit for 12 minutes.
  3. After 12 minutes, transfer the eggs to an ice bath and cool for 5 minutes.
  4. Peel the eggs and slice them in half lengthwise. Remove the yolks and place them in a mixing bowl.
  5. Mash the yolks with a fork and then mix in mayonnaise, Dijon mustard, white vinegar, salt, and pepper until smooth.
  6. Spoon or pipe the yolk mixture back into the egg whites.
  7. Sprinkle with paprika and chives if desired. Serve immediately or refrigerate until serving.
