- 1 large onion, chopped
- 3 cloves garlic, minced
- 3 carrots, diced
- 2 celery stalks, diced
- 1 bell pepper, diced
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 6 cups vegetable or chicken broth
- 2 cups diced tomatoes (canned or fresh)
- 1 cup green beans, trimmed and chopped
- 1 cup corn (fresh, frozen, or canned)
- Salt and pepper to taste
- Optional: 1 cup cooked pasta or rice
Instructions
- In a large pot, heat olive oil over medium heat. Add the chopped onion and sauté until translucent.
- Stir in the minced garlic, diced carrots, celery, and bell pepper. Cook for about 5 minutes until vegetables are softened.
- Add the dried thyme and oregano, stirring to combine.
- Pour in the broth and add the diced tomatoes. Bring the mixture to a boil.
- Reduce heat and add the green beans and corn. Simmer for 20-30 minutes until all vegetables are tender.
- Season with salt and pepper to taste. If using, add cooked pasta or rice.
- Allow the soup to cool completely before transferring to freezer-safe containers.
- Label containers with the date and type of soup. Freeze for up to 3 months.

- To reheat, thaw the soup in the refrigerator overnight, then heat on the stove or in the microwave until hot.
