- 200g dark chocolate (70% cocoa), chopped
- 3 tablespoons unsalted butter
- 4 large eggs, separated
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 pinch salt
- 1 cup heavy cream
- Chocolate shavings and fresh berries for garnish
Instructions
- Melt the dark chocolate and butter together in a heatproof bowl set over a pot of simmering water, stirring until smooth. Remove from heat and let cool slightly.
- In a separate bowl, whisk the egg yolks with the granulated sugar and vanilla extract until pale and fluffy.
- Gently fold the melted chocolate mixture into the egg yolk mixture until well combined.
- In another bowl, beat the egg whites with a pinch of salt until stiff peaks form. Gently fold the egg whites into the chocolate mixture in three additions.
- In a separate bowl, whip the heavy cream until soft peaks form. Fold the whipped cream into the chocolate mixture until no white streaks remain.
- Spoon the mousse into individual serving dishes and refrigerate for at least 2 hours or until set.
- Before serving, garnish with chocolate shavings and fresh berries.
Notes
- For a lighter version, you can substitute half of the heavy cream with Greek yogurt.
- Feel free to add a splash of liqueur like Grand Marnier or Kahlua for an adult twist.
