Ingredients

  • 200g dark chocolate (70% cocoa), chopped
  • 3 tablespoons unsalted butter
  • 4 large eggs, separated
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 pinch salt
  • 1 cup heavy cream
  • Chocolate shavings and fresh berries for garnish

Instructions

  1. Melt the dark chocolate and butter together in a heatproof bowl set over a pot of simmering water, stirring until smooth. Remove from heat and let cool slightly.
  2. In a separate bowl, whisk the egg yolks with the granulated sugar and vanilla extract until pale and fluffy.
  3. Gently fold the melted chocolate mixture into the egg yolk mixture until well combined.
  4. In another bowl, beat the egg whites with a pinch of salt until stiff peaks form. Gently fold the egg whites into the chocolate mixture in three additions.
  5. In a separate bowl, whip the heavy cream until soft peaks form. Fold the whipped cream into the chocolate mixture until no white streaks remain.
  6. Spoon the mousse into individual serving dishes and refrigerate for at least 2 hours or until set.
  7. Before serving, garnish with chocolate shavings and fresh berries.

Notes

  • For a lighter version, you can substitute half of the heavy cream with Greek yogurt.
  • Feel free to add a splash of liqueur like Grand Marnier or Kahlua for an adult twist.
