This is a simple and healthy low cholesterol dinner recipe that is quick to prepare.
Ingredients

- 2 cups of quinoa
- 4 cups of vegetable broth
- 1 cup of chopped spinach
- 1 cup of cherry tomatoes, halved
- 1 tablespoon of olive oil
- 1 teaspoon of garlic powder
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water.
- In a pot, combine quinoa and vegetable broth. Bring to a boil.
- Reduce heat to low, cover, and simmer for 15 minutes.
- Stir in spinach, cherry tomatoes, olive oil, garlic powder, salt, and pepper.
- Cook for an additional 5 minutes until spinach is wilted.
- Serve warm.
Notes
- Store leftovers in the refrigerator for up to 3 days.
- This dish can be served cold as a salad.
