Description

A hearty low carb shepherd’s pie made with ground meat and vegetables topped with creamy cauliflower mash.


Ingredients

  • 1 lb ground beef or lamb
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup carrots, diced
  • 1 cup peas
  • 1 cup beef broth
  • 2 cups cauliflower florets
  • 2 tablespoons butter
  • 1/2 cup cheese, shredded
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a skillet, brown the meat over medium heat.
  3. Add onion and garlic, cooking until softened.
  4. Stir in carrots and peas, cooking for 5 minutes.
  5. Add beef broth and simmer for 10 minutes.
  6. Steam cauliflower until tender, then mash with butter and cheese.
  7. Season the meat mixture with salt and pepper.
  8. Layer the meat mixture in a baking dish and top with cauliflower mash.
  9. Bake for 25-30 minutes until golden.
