Description
A hearty low carb shepherd’s pie made with ground meat and vegetables topped with creamy cauliflower mash.
Ingredients

- 1 lb ground beef or lamb
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 cup carrots, diced
- 1 cup peas
- 1 cup beef broth
- 2 cups cauliflower florets
- 2 tablespoons butter
- 1/2 cup cheese, shredded
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- In a skillet, brown the meat over medium heat.
- Add onion and garlic, cooking until softened.
- Stir in carrots and peas, cooking for 5 minutes.
- Add beef broth and simmer for 10 minutes.
- Steam cauliflower until tender, then mash with butter and cheese.
- Season the meat mixture with salt and pepper.
- Layer the meat mixture in a baking dish and top with cauliflower mash.
- Bake for 25-30 minutes until golden.

- Use any ground meat you prefer.
- Substitute cheese for a dairy-free option.
- Store leftovers in the fridge for up to 3 days.
