Ingredients

- 1 medium cauliflower, cut into florets
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup chopped green onions
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the cauliflower florets with olive oil, garlic powder, paprika, salt, and pepper until well coated.
- Spread the cauliflower evenly on a baking sheet and roast for 25-30 minutes until golden and tender.
- Remove the cauliflower from the oven and sprinkle with cheddar cheese.
- Return to the oven for an additional 5 minutes, or until the cheese is melted.
- Serve with a dollop of sour cream and a sprinkle of green onions.
