- 2 ripe bananas
- 1 cup almond flour
- 1/4 cup coconut flour
- 3 large eggs
- 1/4 cup unsweetened almond milk
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp cinnamon
- 1/4 cup erythritol or other sweetener
- 1/2 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mash the bananas until smooth.
- Add eggs and almond milk to the mashed bananas. Mix well.
- In another bowl, combine almond flour, coconut flour, baking soda, baking powder, cinnamon, and erythritol.
- Gradually add the dry ingredients to the wet ingredients. Stir until just combined.
- Pour the batter into a greased loaf pan.
- Bake for 45-50 minutes or until a toothpick comes out clean.
- Let it cool before slicing.
Notes
- Store leftovers in an airtight container.
- This bread can be frozen for longer storage.
- Feel free to add nuts or chocolate chips if desired.
