  • 1 cup corn, drained
  • 1 cup diced tomatoes

  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash the sweet potatoes thoroughly and prick them several times with a fork.
  3. Place the sweet potatoes on a baking sheet and drizzle with olive oil. Season with salt and pepper.
  4. Bake in the preheated oven for about 45-60 minutes, or until tender.
  5. While the sweet potatoes are baking, prepare the toppings: in a bowl, mix black beans, corn, diced tomatoes, chili powder, salt, and pepper.
  6. Once the sweet potatoes are done, remove them from the oven and let them cool slightly.
