- 1 bag (12 oz) tortilla chips
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 cup diced tomatoes
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 1/2 cup sliced jalapeños (fresh or pickled)
- 1 avocado, diced
- 1/2 cup sour cream or Greek yogurt
- 1/4 cup chopped fresh cilantro
- 1 lime, cut into wedges
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- Spread the tortilla chips in an even layer on a large baking sheet.
- In a bowl, mix together the black beans, corn, diced tomatoes, and season with salt and pepper.
- Spoon the bean and corn mixture evenly over the tortilla chips.
- Sprinkle the shredded cheese and sliced jalapeños over the top.
- Bake in the preheated oven for about 10-15 minutes or until the cheese is melted and bubbly.
- Remove from the oven and let cool slightly.
- Top with diced avocado, sour cream, and chopped cilantro.
- Serve immediately with lime wedges on the side.
Notes
- Feel free to add other toppings such as olives, diced bell peppers, or green onions.
- For a spicier kick, use spicy cheese or add more jalapeños.
