- 1/2 cup cooked bacon or sausage, chopped
- 1/4 cup diced bell peppers
- 1/4 cup diced onions
- 1/4 cup salsa
- 4 large flour tortillas
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- In a bowl, whisk together eggs, milk, salt, and pepper until well combined.
- In a skillet over medium heat, add the bell peppers and onions. Sauté until softened, about 3-4 minutes.
- Pour the egg mixture into the skillet with the vegetables. Cook, stirring gently, until the eggs are scrambled and cooked through.
- Add the cooked bacon or sausage and shredded cheese to the skillet, stirring until the cheese is melted.
- Warm the tortillas in a separate skillet or microwave for a few seconds until pliable.
- Divide the egg mixture evenly among the tortillas. Top with salsa and any additional toppings you like.
- Roll up each tortilla tightly to form a burrito, tucking in the ends as you go.
- Serve immediately, garnished with fresh cilantro if desired.
