Description
A classic lime meringue pie with a tangy lime filling and a fluffy meringue topping.

- 1 pre-made pie crust
- 1 cup granulated sugar
- 2 tablespoons cornstarch
- 1/4 teaspoon salt
- 1 cup water
- 3 large egg yolks, beaten
- 1/2 cup fresh lime juice
- 1 tablespoon lime zest
- 2 tablespoons butter
- 3 large egg whites
- 1/4 teaspoon cream of tartar
Instructions
- Preheat the oven to 350°F (175°C).
- In a saucepan, whisk together the sugar, cornstarch, and salt. Stir in the water and cook over medium heat until the mixture thickens and bubbles.
- Reduce heat to low and gradually stir a small amount of the hot mixture into the beaten egg yolks. Then, return the egg yolk mixture to the saucepan.
- Stir in the lime juice, lime zest, and butter. Cook for an additional 2 minutes, then pour into the pre-baked pie crust.
- In a separate bowl, beat the egg whites with cream of tartar until soft peaks form. Gradually add sugar and beat until stiff peaks form.
- Spread the meringue over the lime filling, sealing it to the edges of the crust.
- Bake in the preheated oven for 10 to 15 minutes, or until the meringue is golden brown. Allow to cool completely before serving.
Notes
- For best results, use fresh lime juice.
- Make sure to seal the meringue to the edges of the pie crust to prevent weeping.
