Ingredients

  • 1 lb firm white fish (such as cod or tilapia), cut into bite-sized pieces
  • 1 can (14 oz) coconut milk
  • 2 cups fish or vegetable broth
  • 2 limes, juiced and zested
  • 1 tablespoon fish sauce
  • 1 tablespoon ginger, minced
  • 2 cloves garlic, minced
  • 1 small onion, diced
  • 1 red bell pepper, sliced
  • 1 cup mushrooms, sliced
  • 1 tablespoon olive oil
  • Fresh cilantro, for garnish
  • Salt and pepper, to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the diced onion, garlic, and ginger, and sauté until the onion is translucent.
  2. Add the red bell pepper and mushrooms, and continue to cook for another 3-4 minutes until softened.
  3. Pour in the coconut milk and fish broth, and bring to a gentle simmer.
  4. Stir in the lime juice, lime zest, and fish sauce. Season with salt and pepper to taste.
  5. Add the fish pieces to the pot, cooking until the fish is opaque and cooked through, about 5-7 minutes.
  6. Remove from heat and garnish with fresh cilantro before serving.

Notes

  • Feel free to add other vegetables such as spinach or bok choy for added nutrition.
  • For a spicier kick, add sliced jalapeños or red pepper flakes to taste.
