A refreshing and flavorful soup combining the zest of lime with creamy coconut and tender fish, perfect for a light meal.

- 1 lb firm white fish (such as cod or tilapia), cut into bite-sized pieces
- 1 can (14 oz) coconut milk
- 2 cups fish or vegetable broth
- 2 limes, juiced and zested
- 1 tablespoon fish sauce
- 1 tablespoon ginger, minced
- 2 cloves garlic, minced
- 1 small onion, diced
- 1 red bell pepper, sliced
- 1 cup mushrooms, sliced
- 1 tablespoon olive oil
- Fresh cilantro, for garnish
- Salt and pepper, to taste
Instructions
- In a large pot, heat olive oil over medium heat. Add the diced onion, garlic, and ginger, and sauté until the onion is translucent.
- Add the red bell pepper and mushrooms, and continue to cook for another 3-4 minutes until softened.
- Pour in the coconut milk and fish broth, and bring to a gentle simmer.
- Stir in the lime juice, lime zest, and fish sauce. Season with salt and pepper to taste.
- Add the fish pieces to the pot, cooking until the fish is opaque and cooked through, about 5-7 minutes.
- Remove from heat and garnish with fresh cilantro before serving.
Notes
- Feel free to add other vegetables such as spinach or bok choy for added nutrition.
- For a spicier kick, add sliced jalapeños or red pepper flakes to taste.
