Ingredients

  • 400ml coconut milk
  • 2 cups fish or vegetable broth
  • 1 lime, juiced and zested
  • 1 tbsp ginger, grated
  • 2 garlic cloves, minced
  • 1 red chili, sliced (optional)
  • 1 tbsp fish sauce
  • 1 tbsp brown sugar
  • 1 handful fresh cilantro, chopped
  • 1 tbsp vegetable oil
  • Salt to taste

Instructions

  1. Heat oil in a pot over medium heat. Add ginger, garlic, and chili. Sauté for 1 minute.
  2. Pour in broth and coconut milk. Bring to a simmer.
  3. Add fish cubes and cook for 5-7 minutes until opaque.
  4. Stir in lime juice, zest, fish sauce, and sugar. Adjust seasoning with salt.
  5. Garnish with cilantro before serving. Serve hot.
