- 500g white fish fillets (like cod or snapper), cubed
- 400ml coconut milk
- 2 cups fish or vegetable broth
- 1 lime, juiced and zested
- 1 tbsp ginger, grated
- 2 garlic cloves, minced
- 1 red chili, sliced (optional)
- 1 tbsp fish sauce
- 1 tbsp brown sugar
- 1 handful fresh cilantro, chopped
- 1 tbsp vegetable oil
- Salt to taste
Instructions
- Heat oil in a pot over medium heat. Add ginger, garlic, and chili. Sauté for 1 minute.
- Pour in broth and coconut milk. Bring to a simmer.
- Add fish cubes and cook for 5-7 minutes until opaque.
- Stir in lime juice, zest, fish sauce, and sugar. Adjust seasoning with salt.
- Garnish with cilantro before serving. Serve hot.
