Ingredients
Scale
- 2 cups all-purpose flour
- 1 3/4 cups granulated sugar
- 3/4 cup unsweetened cocoa powder
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 2 large eggs
- 1 cup whole milk
- 1/2 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
- 1 cup unsalted butter, softened
- 4 cups powdered sugar
- 1/2 cup heavy cream
- 1/2 teaspoon vanilla extract
- Yellow and orange gel food coloring
- Gold star sprinkles (for decoration)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large mixing bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add eggs, milk, oil, and vanilla extract to the dry ingredients. Mix on medium speed for 2 minutes until well combined.
- Stir in boiling water until the batter is smooth (the batter will be thin).
- Pour the batter evenly into the prepared cake pans.
- Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean. Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
- In a large bowl, beat the softened butter until creamy. Gradually add powdered sugar, heavy cream, and vanilla extract, beating until fluffy and smooth.
- Once the cakes are completely cool, place one layer on a serving plate. Spread a layer of frosting on top.
- Place the second cake layer on top and frost the top and sides of the cake with the remaining frosting.
- Divide frosting into two bowls and tint one bowl with yellow gel food coloring and the other with orange.
- Using a spatula, create a gradient effect on the sides of the cake with the yellow and orange frosting.
- Decorate the top with gold star sprinkles to resemble the Leo zodiac sign.
- Slice and serve your Leo Cake!
Notes
- Make sure to let the cakes cool completely before frosting to prevent melting the frosting.
- You can add more food coloring for a more vibrant color if desired.
- Store leftover cake in an airtight container at room temperature for up to 3 days.
