Description
A hearty lentil spinach soup made in a slow cooker.
Ingredients

- 1 cup lentils
- 4 cups vegetable broth
- 2 cups fresh spinach
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 1 teaspoon cumin
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- Rinse the lentils under cold water.
- Add all ingredients to the slow cooker.
- Stir to combine.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Stir in the spinach 30 minutes before serving.
- Season with salt and pepper before serving.

- This soup freezes well.
- Adjust spices to your taste.
- Can add diced tomatoes for extra flavor.
