Description
A healthy and hearty lentil soup packed with spinach.
Ingredients
Scale
- 1 cup lentils
- 4 cups vegetable broth
- 2 cups fresh spinach
- 1 onion, chopped
- 2 carrots, diced
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Rinse the lentils under cold water.
- In a pot, sauté onion, carrots, and garlic until soft.
- Add lentils, vegetable broth, cumin, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 25 minutes.
- Add spinach and cook for an additional 5 minutes.
- Serve hot.

- Store leftovers in the fridge for up to 3 days.
- This soup freezes well.
