Ingredients

  • 2 cups fresh spinach
  • 1 onion, chopped

  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon salt

Instructions

  1. Rinse the lentils under cold water.
  2. In a pot, sauté onion, carrots, and garlic until soft.
  3. Add lentils, vegetable broth, cumin, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 25 minutes.
  5. Add spinach and cook for an additional 5 minutes.
  6. Serve hot.
