Ingredients

- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 medium carrots, diced
- 2 celery stalks, diced
- 1 bell pepper, chopped
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon smoked paprika
- 1 cup green or brown lentils, rinsed
- 6 cups vegetable broth
- 1 can (14.5 ounces) diced tomatoes, undrained
- 2 cups kale, chopped
- Salt and pepper to taste
- Juice of 1 lemon
Instructions
- In a large pot, heat olive oil over medium heat. Add chopped onion and garlic, sauté until onion is translucent.
- Add diced carrots, celery, and bell pepper. Cook for about 5 minutes until vegetables are softened.
- Stir in ground cumin, ground coriander, and smoked paprika. Cook for another minute until fragrant.
- Add rinsed lentils, vegetable broth, and diced tomatoes to the pot. Bring the mixture to a boil.
- Reduce heat to a simmer, cover, and cook for 25-30 minutes, or until lentils are tender.
- Stir in chopped kale and cook for an additional 5 minutes until kale is wilted.
- Season with salt, pepper, and lemon juice to taste. Serve warm.
