Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 1 bell pepper, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon smoked paprika
  • 1 cup green or brown lentils, rinsed
  • 6 cups vegetable broth
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 2 cups kale, chopped
  • Salt and pepper to taste
  • Juice of 1 lemon

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onion and garlic, sauté until onion is translucent.
  2. Add diced carrots, celery, and bell pepper. Cook for about 5 minutes until vegetables are softened.
  3. Stir in ground cumin, ground coriander, and smoked paprika. Cook for another minute until fragrant.
  4. Add rinsed lentils, vegetable broth, and diced tomatoes to the pot. Bring the mixture to a boil.
  5. Reduce heat to a simmer, cover, and cook for 25-30 minutes, or until lentils are tender.
  6. Stir in chopped kale and cook for an additional 5 minutes until kale is wilted.
  7. Season with salt, pepper, and lemon juice to taste. Serve warm.
