Description

Ingredients

  • 1 cup dried lentils
  • 4 cups vegetable broth
  • 2 cups fresh spinach, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add onion, garlic, and carrot. Cook until softened.
  3. Stir in cumin and paprika. Cook for 1 minute.
  4. Add lentils and vegetable broth. Bring to a boil.
  5. Reduce heat and simmer for 20-25 minutes until lentils are tender.
  6. Add spinach and cook for another 3-5 minutes.
  7. Season with salt and pepper. Serve warm.

  • Rinse lentils before cooking to remove debris.
  • Adjust broth quantity for desired soup thickness.
