A hearty and nutritious lentil and potato soup.
Ingredients

- 1 cup lentils
- 2 medium potatoes, diced
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 4 cups vegetable broth
- 1 teaspoon cumin
- Salt to taste
- Pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a pot over medium heat.
- Add onion, carrots, and celery. Cook until softened.
- Add diced potatoes and lentils. Stir well.
- Pour in vegetable broth and add cumin, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 25-30 minutes.
- Check lentils and potatoes for doneness.
- Remove from heat and let cool slightly before serving.
Notes
- Adjust seasonings to your taste.
- Add more broth for a thinner soup.
- Store leftovers in the fridge for up to 3 days.
