- 4 bone-in, skin-on chicken thighs
- 2 tablespoons olive oil
- 2 lemons (zested and juiced)
- 4 cloves garlic (minced)
- 1 tablespoon fresh rosemary (chopped)
- 1 tablespoon fresh thyme (chopped)
- Salt and pepper to taste
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, combine olive oil, lemon zest, lemon juice, minced garlic, rosemary, thyme, salt, and pepper.
- Add the chicken thighs to the bowl and toss until they are evenly coated in the marinade.
- Place the chicken thighs skin-side up on a baking sheet lined with parchment paper.
- Roast in the preheated oven for 35-40 minutes, or until the internal temperature reaches 165°F (75°C) and the skin is crispy.
- Let the chicken rest for 5 minutes before serving.
