Description
A flavorful and light dish featuring tender chicken in a lemon herb sauce, served with angel hair pasta and grilled zucchini.
Ingredients

- 2 boneless, skinless chicken breasts
- 1/4 cup all-purpose flour
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil
- 1/4 cup fresh lemon juice
- 1/4 cup chicken broth
- 2 tbsp capers
- 2 tbsp chopped fresh parsley
- 8 oz angel hair pasta
- 2 medium zucchinis, sliced
- 1 tbsp butter
Instructions
- Pound chicken breasts to an even thickness and season with salt and pepper.
- Dredge chicken in flour, shaking off excess.
- Heat olive oil in a pan over medium heat. Cook chicken for 4-5 minutes per side until golden and cooked through. Remove and set aside.
- In the same pan, add lemon juice, chicken broth, and capers. Simmer for 2 minutes.
- Return chicken to the pan and coat with sauce. Sprinkle with parsley.
- Cook angel hair pasta according to package instructions. Drain and toss with butter.
- Grill zucchini slices for 2-3 minutes per side until tender.
- Serve chicken over pasta with grilled zucchini on the side.
