Description

Ingredients

  • 4 tilapia fillets
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • Juice of 1 lemon
  • Zest of 1 lemon
  • Salt and pepper to taste
  • 1 cup quinoa
  • 2 cups vegetable broth or water
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, whisk together olive oil, minced garlic, lemon juice, lemon zest, salt, and pepper.
  3. Place tilapia fillets in a baking dish and pour the lemon garlic mixture over the top, ensuring the fillets are well coated.
  4. Bake the tilapia for 15-20 minutes, or until the fish flakes easily with a fork.
  5. While the tilapia is baking, rinse quinoa under cold water. In a medium saucepan, combine quinoa and vegetable broth (or water).
  6. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until quinoa is fluffy and liquid is absorbed.
  7. Fluff quinoa with a fork and season with salt and pepper to taste.
  8. Serve the baked tilapia over a bed of quinoa, garnished with fresh parsley.
