- 4 tilapia fillets
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- Juice of 1 lemon
- Zest of 1 lemon
- Salt and pepper to taste
- 1 cup quinoa
- 2 cups vegetable broth or water
- Fresh parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a small bowl, whisk together olive oil, minced garlic, lemon juice, lemon zest, salt, and pepper.
- Place tilapia fillets in a baking dish and pour the lemon garlic mixture over the top, ensuring the fillets are well coated.
- Bake the tilapia for 15-20 minutes, or until the fish flakes easily with a fork.
- While the tilapia is baking, rinse quinoa under cold water. In a medium saucepan, combine quinoa and vegetable broth (or water).
- Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until quinoa is fluffy and liquid is absorbed.
- Fluff quinoa with a fork and season with salt and pepper to taste.
- Serve the baked tilapia over a bed of quinoa, garnished with fresh parsley.
