Ingredients

  • 1 lb shrimp, peeled and deveined
  • 3 medium zucchinis, spiralized into noodles
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 lemon, juiced and zested
  • 1/4 tsp red pepper flakes
  • Salt and black pepper to taste
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add minced garlic and sauté for 30 seconds until fragrant.
  3. Add shrimp, red pepper flakes, salt, and black pepper. Cook for 2-3 minutes per side until shrimp turns pink.
  4. Remove shrimp from the skillet and set aside.
  5. In the same skillet, add zucchini noodles and cook for 2-3 minutes until slightly softened.
  6. Return shrimp to the skillet, add lemon juice and zest, and toss to combine.
  7. Garnish with fresh parsley before serving.
