- 1 lb shrimp, peeled and deveined
- 3 medium zucchinis, spiralized into noodles
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1 lemon, juiced and zested
- 1/4 tsp red pepper flakes
- Salt and black pepper to taste
- 2 tbsp fresh parsley, chopped
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add minced garlic and sauté for 30 seconds until fragrant.
- Add shrimp, red pepper flakes, salt, and black pepper. Cook for 2-3 minutes per side until shrimp turns pink.
- Remove shrimp from the skillet and set aside.
- In the same skillet, add zucchini noodles and cook for 2-3 minutes until slightly softened.
- Return shrimp to the skillet, add lemon juice and zest, and toss to combine.
- Garnish with fresh parsley before serving.
