- 1/4 cup olive oil
- 1/4 cup fresh lemon juice
- 4 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Lemon slices for garnish
- Fresh parsley for garnish
Instructions
- In a bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, thyme, salt, and pepper.
- Place the chicken breasts in a large ziplock bag or shallow dish and pour the marinade over the chicken. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 4 hours for maximum flavor.
- Preheat the grill or a skillet over medium-high heat. Remove the chicken from the marinade and discard the marinade.
- Cook the chicken for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken is no longer pink in the center.
- Remove the chicken from the heat and let it rest for 5 minutes before slicing.
- Garnish with lemon slices and fresh parsley before serving.
