Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • 1/4 cup fresh lemon juice
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Lemon slices for garnish
  • Fresh parsley for garnish

Instructions

  1. In a bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, thyme, salt, and pepper.
  2. Place the chicken breasts in a large ziplock bag or shallow dish and pour the marinade over the chicken. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 4 hours for maximum flavor.
  3. Preheat the grill or a skillet over medium-high heat. Remove the chicken from the marinade and discard the marinade.
  4. Cook the chicken for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken is no longer pink in the center.
  5. Remove the chicken from the heat and let it rest for 5 minutes before slicing.
  6. Garnish with lemon slices and fresh parsley before serving.

Notes
